Daxi Moonlight Cake 大溪月光饼
Daxi Moonlight Cake is featured among the local specialties of Taiwan.

Daxi Moonlight Cake (大溪月光饼) is a round sweet-potato-filled cake from Daxi (大溪), Taoyuan (桃園). Its name refers to its resemblance to the full moon, and its filling makes use of the area's sweet potatoes.
A thin wrapper around the filling
In its 2019 account, the Taiwan Visitors Association (台灣觀光協會) describes the version at He Zhen Xiang Bakery (合珍香餅行): sweet potato forms the filling, with a little glutinous rice added for texture. A thin pastry skin wraps the mixture before the cake is baked. Both wrapper and filling are made by hand.
The bakery's sweet-potato tradition
The association traces the bakery's operation to the late Qing period, when its first generation used Daxi's plentiful sweet potatoes for the filling. The bakery used a large pot to cook fresh sweet-potato filling each day, preserving the cake's traditional preparation.
