Tamsui A-Gei Stuffed Tofu (淡水阿给) is fried tofu filled with glass noodles and sealed with fish paste. In Tamsui (淡水), New Taipei (新北), the Cultural A-Gei (文化阿給) version is made by hand and steamed.
Filling and sealing the tofu
The maker's account on the city tourism site describes opening each piece of fried tofu and filling it with glass noodles stir-fried with soy sauce, fried shallots and spices. Fresh fish paste closes the opening, and the filled tofu then cooks by steaming.
Letting the noodles take up the sauce
The fried tofu, noodles and fish paste give the dish a springy, layered texture. The documented way to eat it is to open the tofu and lift out the noodles so they can absorb the shop's sauce. A bowl of fish-ball soup accompanies this local combination.
