Pineapple Cake (凤梨酥) is a filled pastry found in Taipei (台北)'s bakeries and souvenir-food culture. The city's Taipei Pictorial (台北畫刊) documents local makers' pineapple fillings and pastry textures, with both traditional and newer versions.

Taipei Li Ji's pineapple filling

In the 2017 account, Taipei Li Ji (台北犁記) used selected locally grown pineapples to make its pineapple paste. The magazine describes the filling as sweet with a tart note and the outer pastry as fragrant, flaky and fine-textured. Its variations include egg yolk, pine nuts and cranberry.

A thin wrapper at Chia Te

The same 2017 feature describes Chia Te Bakery (佳德糕餅)'s original pineapple cake as having a thin, soft wrapper and plenty of finely textured filling that does not cling to the teeth. It also records a cherry-flavoured variation among the bakery's offerings.
