Fengyuan Crispy Pork Rib Noodles (丰原排骨酥面) is a noodle soup from Fengyuan (丰原), a district of Taichung (台中), made with pork ribs that are fried and then steamed until they melt in the mouth. Chinese Wikipedia puts it first among the best-known foods of the Miaodong (庙东) night market, the food street beside Fengyuan's Ciji Temple (慈济宫).

How it is made

The Fengyuan District Office (丰原区公所) describes the method used by the Fengyuan Qingshui Rib Noodles (丰原清水排骨面) stall at Miaodong. Good-quality pork ribs are first marinated and then deep-fried. The fried pieces are put into small lidded bowls with water and steamed for thirty to sixty minutes, so that the meat juices seep out and become the soup. The district office describes the rib pieces served in this broth as melting in the mouth.

Where it comes from

Miaodong, also called the Miaodong snack street, covers Zhongzheng Road, Bo'ai Street, Fuxing Road and Xinyi Street beside the temple. The district office calls it Fengyuan's best-known snack street and says it is busiest after dusk. Other Miaodong foods the district office names include a pineapple ice made by stewing fresh pineapple with sugar, thin-skinned steamed shrimp rou yuan (虾仁肉圆), and water caltrop cut into pieces, coated in a thin batter and deep-fried.
