Gangshan Goat Meat (冈山羊肉) is the goat-meat cooking of Gangshan District (冈山区) in Kaohsiung (高雄). The Gangshan District Office names goat-meat hotpot, yangrou lu (羊肉炉), and goat-meat rice noodles, yangrou mifen (羊肉米粉), as the district's signature dishes, and says many of its goat-meat shops use local goat, which it rates above imported meat in texture and flavour.
Where it comes from
Gangshan borders Yanchao (燕巢) and Tianliao (田寮) to the east and Alian (阿莲) to the north. The district office explains that early settlers in the area kept goats, that Tianliao and neighbouring places raised and traded many of them, and that Gangshan became the collection and market centre for the animals.
A 2013 study in the Journal of Chinese Dietary Culture (中国饮食文化) adds that goat meat was not originally part of Taiwanese food culture. Traditionally, the goats raised around Gangshan were only a source of ritual offerings and winter tonic food. Goat meat won wide local acceptance only after the Second World War, when an air force base moved to Gangshan. Mainland Chinese arrivals brought the habit of eating it, and with the techniques for making spicy Sichuan-style doubanjiang (豆瓣酱, fermented broad-bean paste) and the development of sweeter Japanese- and Taiwanese-style versions, the meat and the bean paste came to complement each other. Names such as Gangshan goat-meat rice noodles, danggui goat meat (当归羊肉) and goat-meat hotpot spread from there.
The study also notes that after Taiwan joined GATT and the WTO, frozen imported meat dealt a blow to Gangshan's local goat-meat food culture, and that from 2004 the local government began holding goat-meat festivals under the name Gangshan Goat Meat, with cooking contests.
