Kouhu Dried Mullet Roe (口湖乌鱼子) is produced in Kouhu (口湖), Yunlin (雲林). A Ministry of Education local-produce profile documents the method of Ji Family Seafood (紀家水產行), where Lei Xiying (雷細英) continued her family’s fish farming and roe-making work.

How it is made

In the profile’s account, the farm raises mullet for three years before harvesting the roe. Fish are chilled immediately after capture, and the roe is taken out with its connecting belly flesh retained. Blood is removed before marinating and desalting.

The roe then alternates between sunshine during the day and drying in the shade at night. This repeated drying takes eight to ten days in the maker’s account.

Flavour and serving

The finished orange roe is described as fine-textured and pleasantly sweet-tasting. The Kouhu Digital Opportunity Center / Ministry of Education Department of Information and Technology Education places mullet roe on holiday and wedding-banquet tables, and records two products from this maker: vacuum-packed roe and bite-sized pieces prepared for direct eating.
