Minxiong Goose (民雄鹅肉) includes steamed preparations and goose cooked in water. In a 2022 Agriharvest (农传媒) article, Wu Zhikai (吳至鎧) records interviews with cooks in Minxiong (民雄), explaining how their cooking and finishing methods differ.

Steamed goose

For steaming, a thin coating of salt goes onto the goose before it cooks in a steamer. This preparation produces a springier texture. At Ajun Goose (阿君鵝肉店), the stock that drips below the steamer receives a little salt and is poured over sliced goose before serving.

Goose cooked in water

The other preparation cooks goose in plain water, then cools it in ice water for softer, tender meat. Thin slicing gives a finer texture. Before serving, the slices receive a salty broth based on white soy sauce.
