Fish Noodles 鱼面
Fish Noodles is featured among the local specialties of Taiwan.

Fish Noodles (鱼面) are a traditional Matsu (馬祖) food made from fish mixed with starch and a little salt. Eel, hairtail and pomfret are among the fish used locally.
Festive meals and hotpots
Beigan Township Office (北竿鄉公所) describes fish noodles as a festive food, alongside fish balls and yan dumplings (燕餃). They can be cooked in soup or fried with Chinese cabbage and shrimp. The noodles also withstand extended cooking, making them a local hotpot ingredient.
A stir-fried version
For its stir-fried version, the noodles are first boiled, then rinsed in cold water to remove the starch’s stickiness. Shredded meat, shiitake mushrooms, cabbage, celery, garlic and scallions are fried before the noodles are added over high heat. Sesame oil and pepper finish the dish.
