Yuanlin Rice Pin Noodles (员林米苔目) are a local breakfast and midday food in Yuanlin (員林), Changhua (彰化). Bowls of fine white rice noodles have long been associated with the food stalls around Bo’ai Road (博愛路).
Broth, chives and side dishes
Luo Zhengli (羅征麗), of the Yuanlin Farmers’ Association (員林市農會)’s ninth home economics group, describes smooth, chewy noodles in a rich bone broth, with chives and crisp fried shallots. Boiled meat, fried tofu and fenchang intestine (粉腸) are familiar side dishes in her account.
Market stalls on Bo’ai Road
The Ministry of Agriculture (農業部)’s history of Yuanlin food links the hot rice-noodle stalls with farmers and traders who brought produce to the market. Its account also describes eating the noodles with a small plate of sliced meat on Bo’ai Road.
