Eshan Pounded Chicken (峨山舂鸡) is a pounded chicken dish of Eshan Yi Autonomous County (峨山彝族自治县) in Yuxi (玉溪), Yunnan. Wenlvnews, the Yunnan travel news site, calls pounded chicken the best known of Eshan's pounded dishes.

Where it comes from

Pounding (舂) runs through Eshan cooking: meat, fish, beans, mushrooms and vegetables are all prepared this way, a rough-looking action that Wenlvnews says hides a fine, supple technique. Of all Eshan's pounded chicken, the version from Xiaojie (小街) is the most famous.

Flavour and ingredients

What sets Eshan Pounded Chicken apart is its seasoning: a powder of local large toon seeds (大香椿籽面) from Eshan, together with peanuts and other seasonings. Numbing, hot and aromatic flavours gradually blend into the sweet, fresh meat, and the finished dish tastes numbing, spicy and refreshing.
