Kaiyuan Rolled Rice Noodles (开远小卷粉) are soft, pliable rolls made by quickly steaming a mixture of rice batter. The sheets wrap savoury fillings and are eaten with a separately mixed dipping sauce.
Fillings and texture
Filling choices combine meat with celery, datoucai (大头菜), chopped mushrooms, small bean sprouts or jiaotou (藠头). The steamed wrapper is soft and slightly sticky, while remaining flexible enough to enclose the filling.
Choosing the dipping sauce
Dipping seasonings are chosen to suit the filling and the eater’s preference. Options include dried or oil-fried chilli, toasted chilli, chopped fresh chilli and fermented chilli. Ginger juice, garlic juice, fermented tofu, peanuts, coriander and chopped fish mint can also be used, alongside vinegar, soy sauce, sesame oil, garlic oil, sugar and salt.
