Pea Flour Porridge (稀豆粉) is a thick, pale yellow purée of peas that people in Dehong Dai and Jingpo Autonomous Prefecture (德宏傣族景颇族自治州) in Yunnan eat hot for breakfast, ladled over rice noodles. Dehong Net, run by the prefecture's media centre, lists it among the foods cooked fresh at stalls inside Dehong's food markets.
How it is made
China Central Television's food programme Weidao (味道) describes Pea Flour Porridge as a dish simmered from peas, with a rich, mellow taste, and as the breakfast people in Tengchong (腾冲) cannot do without. In Dehong's markets it sits in a heavy aluminium pot over a small stove; when the lid comes off, the steam carries a strong smell of beans. The purée is a soft goose-yellow, thick, dense and smooth.
How it is eaten
In Dehong it is eaten as Pea Flour Porridge with rice noodles (稀豆粉米线). A ladle of purée goes over rice noodles that have just been scalded, followed by garlic juice, xiaomila chillies (小米辣) and coriander, and a handful of crushed peanuts on top. The noodles soak up the body of the purée along with the sour, spicy dressing.
The Mangshi (芒市) media centre's guide to the city's 2025 Water-Splashing Festival lists soft, springy Pea Flour Porridge rice noodles among local breakfasts, next to ersi rice-cake noodles with beef balls (牛肉圆子饵丝) and Burmese milk tea. A Zhangshang Dehong (掌上德宏) round-up of Dehong's winter breakfasts, reprinted by the Lijiang media centre, names it first, alongside grilled baba (粑粑) rice cakes, Dai rice-ball "burgers" and freshly made soy milk and tofu pudding.
Where it comes from
A Yunnan Daily (云南日报) essay on the province's New Year meals, published in February 2024 ahead of the Spring Festival, lists Dehong Pea Flour Porridge (德宏稀豆粉) among the classic New Year dishes it names place by place.
