Zhanyi Chili Chicken (沾益辣子鸡) is a local chicken dish from Zhanyi (沾益), Qujing (曲靖). A district government account describes its main ingredients as locally raised chickens at least a year old, Qiubei chillies (丘北椒), ginger and garlic.
Chilli paste and marinated chicken
In the documented preparation, cleaned chicken is soaked in water, chopped into roughly three-centimetre pieces and briefly marinated. The chillies are soaked and made into a paste. Finely chopped ginger and garlic are then fried with that paste over high heat before the marinated chicken is added and stir-fried until strongly aromatic.
A local table of accompaniments
The government describes serving the chicken as part of a meal with fried potatoes, fried stinky tofu, lightly boiled bitter-greens soup, soft tofu and small steamed buns.
