Jiangshan Steamed Rice Cake (江山米糕) is a Lunar New Year food in Jiangshan (江山). Families gather to steam cakes from flour made from dried cooked rice, with sesame and brown sugar among the traditional ingredients.

Preparing the rice flour

The preparation takes several stages: rice is soaked, steamed, dried in the sun, stir-roasted and milled. Flavouring ingredients are mixed into the flour before steaming and cutting the cake. Tide News (潮新闻), in a January 2024 feature published by Zhejiang Online (浙江在线), describes the family gathering around this work as a familiar winter occasion.

New flavours in Qingyang

In Qingyang Village (清漾村), maker Zhou Zhongyuan (周中原) developed milk-coffee and walnut-red-date flavours. He also worked with a local traditional Chinese medicine hospital on a version containing huangjing (黄精). Older Jiangshan cakes tended to be hard; Tide News describes newer varieties as better suited to contemporary preferences.

In the January 2024 account, visitors at Zhou’s workshop could try measuring and mixing ingredients, steaming and cutting. He was named a representative inheritor of Quzhou’s (衢州) rice-cake-making heritage project in 2021.
