Jinyun Tushuang Noodles 缙云土爽面
Jinyun Tushuang Noodles is featured among the local specialties of Zhejiang.

Jinyun Tushuang Noodles (缙云土爽面) are made from salted wheat dough that undergoes repeated fermentation before being pulled and dried. Xingwang Village (姓王村) in Shuhong Town (舒洪镇) is a centre of this noodle-making trade in Jinyun (缙云).
Salted dough and pulled strands
An October 2018 Shuhong Town government article follows a workshop at the Jinyun Shuangmian Museum (缙云爽面博物馆). When children asked why the dough looked darker than dough at home, their instructor identified the locally milled flour as coming from “908” wheat. Another question about its salty taste prompted an explanation of the salt and fermentation used in making the noodles.
The children worked through mixing, repeated fermentation, placing dough strips on rods, pulling the strands and drying them, guided by experienced makers.
Teaching a village craft
The museum stands at the entrance to Xingwang Village, where noodle processing provides an income for residents. Shuhong Town recorded noodle-making and noodle-cooking competitions there, as well as the visit by fifty primary-school children.
