Steaming thin rice sheets
Making the sheets involves soaking rice, grinding it, steaming, cutting and drying. In a February 2026 Lishui Daily (丽水日报) feature carried by the municipal government, Yingchuan villager Hu Haizhu (胡海珠) pours a ladleful of prepared rice mixture into a steaming tray. After three minutes, she lifts out a white, tender, springy sheet about three millimetres thick. Rice aroma fills her kitchen, while strips of dried fenpi are laid out in village courtyards and drying grounds.
Breakfast and newer dishes
In the county town, breakfast bowls are paired with doufuniang (豆腐娘) or a broth slowly simmered from bones. Lishui Daily also profiles chef Mei Jiandong (梅建东), whose restaurant prepares scallion-oil fenpi and fenpi stewed with pig trotters. Steaming, boiling, pan-frying and deep-frying give the sheets several forms across the day.
