Hangzhou lotus-root starch pudding 藕粉
Hangzhou lotus-root starch pudding is featured among the local specialties of Hangzhou and Zhejiang.

Oufen (藕粉) is lotus-root starch served as a smooth, translucent warm pudding. Hangzhou's Sanjiacun tradition connects the finished bowl with lotus growing and the processing of starch in the canal-side area of today's Linping district.
How it is prepared
A 2026 local report describes washing and grinding lotus root, then filtering and settling the starch. In the hand-shaved tradition, the starch mass is sliced into thin flakes and dried, rather than simply being sold as ground whole lotus root.
Flavour & texture
For the traditional product described in that report, a little cold water first disperses the starch, then boiling water and stirring create a translucent, pale-brown pudding. The resulting texture is fine and slippery, with a delicate lotus-root character.
Local context & naming
Sanjiacun is one documented local production tradition, not proof that every packet labelled West Lake lotus-root powder comes from that village. Check the producer and ingredient label when comparing packaged products.
Ordering this dish
Clarify whether you are buying a prepared bowl, plain starch or an instant mixture. Ask whether sugar, nuts, seeds or flowers have been added. For a packet, follow its own preparation instructions because different mixtures may behave differently.
At the table
Let a hot bowl cool before taking a full spoonful. For a souvenir purchase, compare ingredient lists and portion instructions rather than relying only on a prominent West Lake name or a decorative lotus image.
Ingredients to check
Plain lotus-root starch and instant mixtures differ. Check the label for added sugar, nuts, seeds or flowers.

Questions before you order
Is lotus-root powder the same as a lotus-root slice?
No. The reviewed hand-shaved product uses separated starch; it is prepared into a soft pudding rather than served as a slice of the whole root.
