Russian-Style Bread Loaf (俄式列巴) is the large Russian-type loaf baked in Heilongjiang, also called da lieba (大列巴), "big lieba". Lieba is the Chinese rendering of khleb (хлеб), the Russian word for bread.

Why the loaf is so big

A standard Russian-style loaf is nearly bigger than a household steamer pot, which is where the "big" in the name comes from. Chinese Wikipedia traces the size to Russian villages, where a village usually had just one bread oven: each family baked a batch there at intervals and ate stored bread at home in between, cutting off a slice at a time.

The name da lieba originally meant a wheat loaf made in Northeast China in imitation of Russian rye bread; it now covers Russian-style bread of every kind.

Flavour and texture

A big loaf smells stronger than a small one, tastes slightly sour, is fairly hard and keeps well. A Qiulin (秋林) manager told the Harbin Daily (哈尔滨日报) that the company has made Russian-style products for a century and keeps the classic parts of that tradition while adding flavours Harbin people like, and still imports many raw materials to hold on to the old taste.

Harbin and the Qiulin bakery

According to Chinese Wikipedia, Harbin (哈尔滨) was the only place in China that kept traditional bakers and ovens for authentic Russian bread, so the loaf became a Harbin speciality; Hailar (海拉尔) in Inner Mongolia, close to Russia, also bakes a fairly authentic version. Northeast Net (东北网) links Harbin's Russian food to the building of the Chinese Eastern Railway and says the big loaf reached ordinary Harbin tables along with red sausage, potted beef and borscht.

The Qiulin food company, whose methods date from 1900, holds two provincial-level intangible cultural heritage listings: its da lieba making technique and its lieba kvass (格瓦斯) technique.

How it is bought and eaten

At the 11th China Western Food Culture Festival on Harbin's Central Street (中央大街) in September 2026, Qiulin laid out its lieba beside red sausage and kvass, and Tadaosi (塔道斯) showed its own lieba next to red sausage and craft beer. The Harbin Daily reports that locals treated the stalls as a shop on their doorstep: one 64-year-old ordered a portion of red sausage and two big loaves.
