Nanxiang soup dumplings 南翔小笼馒头
Nanxiang soup dumplings is featured among the local specialties of Shanghai.

Nanxiang xiaolong mantou (南翔小笼馒头) are thin-skinned steamed dumplings associated with Nanxiang in Shanghai's Jiading district. Their pork filling contains meat jelly that melts during steaming, producing the soup held inside each wrapper.
How it is prepared
The Shanghai government describes a small pleated wrapper enclosing minced pork and jelly. The dough needs to be fine enough to eat easily while keeping the hot filling and liquid together.
Flavour & texture
A successful serving balances tender wrapper, savoury pork and broth. Black vinegar and shredded ginger are common accompaniments, but you can first taste a dumpling without them to compare the flavour.
Local context & naming
Mantou in this local name does not mean the plain, unfilled steamed bread familiar elsewhere. Nanxiang names the Shanghai tradition; a generic xiaolongbao from another place is not automatically a Nanxiang version.
Ordering this dish
Check the filling and the number of dumplings per basket. Classic pork and crab-related fillings are different choices, and a crab version can still contain pork. Ask for the exact filling instead of relying on the English label soup dumpling.
At the table
Lift a dumpling gently onto a spoon, make a small opening and allow steam to escape. Taste the soup carefully before eating the rest. If the wrapper tears, the spoon can catch the liquid.
Ingredients to check
The classic filling contains pork and meat jelly. Check for crab or other additions and confirm wrapper ingredients.
