Jiumentou Nine-Cut Beef Hotpot (涮九门头) is a traditional hot pot from Liancheng County (连城县) in Longyan (龙岩), Fujian, in which beef from nine parts of the animal is cooked with rice wine and several Chinese herbs.

How it is made

The Liancheng county government's culture and tourism directory gives the dish's formal name as shuan jiupin (涮九品, "dipped nine cuts"), with Jiumentou as its popular name, and classes it as a yaoshan (药膳) dish, one that combines food with medicinal herbs. It is marked by fine knife work, a carefully made broth and close attention to the condiments. The meat is strictly selected and finely cut, then cooked with condiments, rice wine and several Chinese herbs.

The making technique, Jiumentou making skill (九门头制作技艺), was added by the Longyan municipal government to its sixth batch of municipal intangible cultural heritage in June 2018.

Flavour and texture

The county describes the meat as fresh, tender and crisp and the broth as fragrant. A shorter county entry on Jiumentou describes the stir-fried form, chao jiupin (炒九品): nine crisp, tender parts of the animal cooked in one dish, bringing together nine different textures and flavours, a reputation summed up as "one plate, nine crisps" (一盘九脆).

Where it comes from

The county presents Jiumentou as a pillar of Liancheng's food industry and as a representative Hakka (客家) dish. Its classic dishes include the hot pot and a flash-fried version, bao chao jiumentou (爆炒九门头). The hot-pot entry says the dish is listed in the national famous-dish register (全国名菜谱), and the shorter entry says the same of the stir-fried form.

The Longyan municipal commerce bureau reports that Liancheng's Jiumentou Nine-Cut Beef Hotpot was named one of the "Fujian Ten Famous Dishes" (福建十大名菜) in a 2016 selection organised by the provincial commerce department together with tourism, press and food-and-drug authorities.

How it is eaten

In Liancheng the hot pot is generally eaten at breakfast. Because it uses meat from nine parts of the animal, covering almost all of its best cuts, local people say that one meal of it is like eating a whole cow (一餐吃了一头牛).
