Danba Cured Fragrant Pig Leg (丹巴香猪腿) is a preserved pork leg from Danba (丹巴). Prepared during winter, it is a food for festivals and for entertaining guests. The finished meat is tender and fragrant.
How it is made
The preparation separates the fat and lean portions of the pig, removes the leaf fat and detaches the legs in their original shape. The legs are exposed to frost, smoked with cypress branches and air-dried before being placed in storage. After a winter in storage, they develop their colour, aroma and flavour.
How it is eaten
The government’s2013 description mentions roasting the surface over charcoal for serving. The meat is then cut into small pieces or torn into thin strands. Its fragrance accompanies a fresh, tender texture.
