Russian-Style Western Cuisine (俄式西餐) is the Russian-rooted restaurant cooking of Harbin (哈尔滨), which the China Hotel Association named China's "Capital of Western Food" in 2017.

Where it comes from

Northeast Net (东北网) ties Harbin's authentic Russian-style western food to the building of the Chinese Eastern Railway, and says red sausage, big lieba bread, potted beef and borscht all reached ordinary Harbin tables. Chinese Wikipedia counts Russian-style western food among the foundations of Heilongjiang cuisine, alongside Shandong, Northeastern and Korean cooking.

The Harbin Daily (哈尔滨日报) singles out three old houses. The restaurant of the Modern Hotel (马迭尔宾馆) has grown with the hotel for a century; its culinary techniques are a provincial-level intangible heritage item, now in their fourth generation. Tadaosi (塔道斯), founded in 1901, holds the same provincial listing for its cooking. The Qiulin (秋林) restaurant rests on Qiulin Foods' craft dating from 1900, whose lieba, red sausage and kvass techniques are also listed.

The Modern Hotel restaurant is known for Russian and Anglo-French set dishes. The Harbin Daily names its Russian-style dressed chicken, mandarin fish baked in cream sauce, and potted beef and potted lamb as the classics diners still order. At the 11th China Western Food Culture Festival on Central Street (中央大街) in September 2026, a coiled sausage called "wulitega" (乌呖特嘎) sizzled on a griddle at the Modern stall.

Tadaosi leans towards the Caucasus: its chef says staff travel to Georgia and Armenia every year to bring back dried mountain spices. It still grills steak and big skewers over fruitwood and makes borscht from a hundred-year-old recipe. Qiulin has turned its restaurant into a "western restaurant with a museum", with old photographs and objects along the corridor.

Adjusted for new diners

The houses deliberately soften the originals. The Modern Hotel restaurant works to a standardised Russian cooking process but has boldly adjusted the flavour to suit Chinese palates while keeping the authentic character. To suit diners from all over the country, Tadaosi cuts salt, oil and sugar so that dishes taste lighter while keeping their distinctive flavour.
