Pickled Cabbage with Pork Belly (酸菜白肉) is Northeast China’s sour-cabbage-and-pork-belly dish, and Heilongjiang’s food listings place it with Hegang. It is the plain, home-style braise rather than the charcoal hotpot version of the same pairing.

Pickled cabbage first, then pork

Northeast 酸菜 is made from Chinese cabbage rather than mustard greens. Whole heads are dipped briefly in boiling water, layered into a crock with a light salt rub, weighted with a heavy stone and covered with water, then left to ferment in a room only just above freezing. Lactic acid bacteria convert the cabbage sugars and the acid preserves it. In the kitchen the drained cabbage is usually braised.

Sour cutting through fat

The pairing is deliberate. Fermented cabbage is sharp and still slightly crunchy; pork belly is rich and soft; the acid cuts the fat and keeps the broth from turning heavy. Northeast cooking generally runs flavourful and generous rather than delicate, so expect a fairly assertive, salty pot rather than a light one.

A winter kitchen staple

Long, cold winters shaped the recipe. Cabbage was salted into crocks for the months when fresh vegetables were scarce, and Northeast food culture is noted for using the low winter temperatures to keep food, with frozen pears and frozen cabbage as the classic examples. 酸菜 also appears in dumplings, stir-fries and hotpots, not only in this braise.

Ingredients and what to check

Cabbage, water and edible salt are the base of the pickle; the meat is pork belly, usually cut thick. Salt is used in the pickling, so the dish is normally a salty one — worth knowing if you are watching sodium intake. If you avoid pork, ask whether the kitchen will serve the cabbage on its own or with a different meat.

Ordering and portioning

Ask whether 酸菜白肉 comes as a small braise or as a pot for the table, because the line between it and 酸菜白肉锅 is not drawn the same way in every restaurant. It is also worth asking whether the cabbage is house-pickled, since that is the part of the dish a kitchen is most likely to make itself.

On the table

It arrives hot, in a bowl or a small pot, with rice the usual accompaniment. The cooking liquid is part of the dish, so a spoon matters as much as chopsticks — ask for a small bowl to ladle broth over the rice, and for a spare plate to set the pickled cabbage aside if the sourness is stronger than you expected.

The hotpot version of the same two ingredients

酸菜白肉锅 takes sour cabbage and pork belly into a copper pot over charcoal: cabbage and stock form the base, thin slices of pork belly are cooked in it, and sesame oil, light soy and mashed garlic go on the side. 白肉血肠 follows the same idea with blood sausage added. It is the shared, cook-at-the-table version of the braise.

Questions before you order

Is Northeast 酸菜 the same as Sichuan 酸菜?

No. Northeast sour cabbage is made from Chinese cabbage, while Sichuan 酸菜 is a mustard-green pickle, so the two are not interchangeable in the kitchen.

Is the dish very salty?

Usually yes, because salt is used when the cabbage is pickled. If you are limiting salt, take the broth sparingly and ask for plain rice alongside.
