Yunyang Noodles (云阳面条) are the noodles of Yunyang County (云阳县), in the heart of the Three Gorges reservoir area of Chongqing. There the day often starts with a bowl of Yunyang zaomian (云阳早面), 'Yunyang morning noodles'.
Flavour and texture
The Yunyang County commerce commission describes the noodles in four words: slippery, soft, fine, and "不浑汤" (they do not muddy the broth). A Chongqing municipal government report describes the morning bowl as springy, slippery noodles in a fresh, rich broth, and a 2025 report from a Yunyang noodle shop in Chongqing's Yubei district (渝北区) opens with the smell of a strong bone broth filling the street at breakfast.
How it is eaten
Portions are ordered by the liang (两, 50 grams). The Yubei report starts with a customer calling for three liang of the house lamb-offal noodles with extra chilli. The branded Yunyang zaomian shops lead with five bowls: Yunyang wontons (云阳包面), Yunyang lamb-offal noodles (云阳羊杂面), Yunyang beef noodles (云阳牛肉面), zhajiang noodles (炸酱面) and xiaomian (小面).
Where it comes from
Noodle-making has deep roots in Yunyang. The municipal government counts about 200,000 Yunyang noodle workers spread across China and more than 70,000 noodle workshops and factories. In August 2022 a panel of expert and public judges picked Yunyang Noodles as one of the nine most representative dishes of the county, and nine international students from seven countries learned to make those dishes at an event in Qingshui Tujia Township (清水土家族乡).
In 2024 Yunyang was named a China noodle-food landmark city (中国·云阳面食美食地标城市). The head of the county noodle association says the county's nearly 600 noodle restaurants long went their own way; with the title, the county began building standard Yunyang zaomian shops, with flagship shops opened in Beijing, Nanjing and Chongqing. Yunyang also led the drafting of Chongqing's first group standard for Yunyang flavoured dried noodles (云阳花色挂面).
