Mutton Vermicelli Soup (羊肉粉汤) is a mutton soup that the Jiayuguan (嘉峪关) Culture and Tourism Bureau calls an authentic traditional snack of the city. The bureau's food guide for visitors lists it straight after grilled meat, which it calls the city's best-known food.
Flavour and texture
The bureau describes the mutton as cooked through but not falling apart, with a slight chewiness left in it. The broth is fresh and mellow, and the soup is fragrant and spicy, rich without tasting greasy. The Gansu Daily (甘肃日报) sums it up as fresh and tasty.
Where it comes from
In a 2021 Gansu Daily feature on Jiayuguan, the writer Liu Enyou (刘恩友) counts the soup among the city's own foods, alongside soft, chewy niangpizi (酿皮子), sour and spicy stir-fried bean jelly (炒凉粉) and spicy hulatang soup (胡辣汤). He lists these separately from dishes brought in from elsewhere, such as Qishan saozi noodles (岐山臊子面) from Shaanxi.
