Coiled Hand-Pulled Pastry (一窝丝) is a traditional wheat-dough cake from Jingyuan County (靖远县) in Baiyin (白银), Gansu, also called golden-thread cake (金丝饼) or coiled-incense cake (盘香饼). The Baiyin district government describes it as pale yellow, sweet and crisp.
How it is made
The Jingyuan county government describes the dough being folded and stretched over and over, then coiled back round, pinched into a round cake and baked. The strands are pulled by hand, and a heritage feature published by the Gansu Provincial Department of Culture and Tourism names the fragrance of flaxseed oil (胡麻油) and crisp layers as its marks. The same feature groups the Yiwosi making technique (一窝丝制作技艺) with Jingyuan lamb as Baiyin's food heritage.
Flavour and texture
A Jingyuan saying sums up the cake: "看似一张饼,提起一窝丝,加水一碗面" (it looks like one flatbread, lift it and it is a nest of threads, add water and it is a bowl of noodles). It eats crisp and flaky.
Where it comes from
Jingyuan brought Yiwosi to the 30th Lanzhou Investment and Trade Fair (兰洽会) in July 2024 among more than twenty local products. A Baiyin Shixian (白银视线) report carried on China Gansu Net says that Jin Aimei (金爱梅), who runs the Jinzuli (金祖历) Yiwosi business, showed a Yiwosi she described as handed down through four generations.
