Northeastern Big-Pot Stew (东北大炖菜) is not one fixed recipe but the family of one-pot stews of Northeast Chinese home cooking: usually a meat, stewed in a large iron pot with vegetables, tofu or glass noodles. In Daqing (大庆), stews such as chicken with mushrooms, the pork-and-blood-sausage "pig-killing dish" and catfish with eggplant are among the ten winter foods the city recommended for its 2021 ice-and-snow tourism season.
Where it comes from
An article from Xinhua's Heilongjiang channel credits the big stews to the Manchus. In their early days they lived by fishing and hunting, camped outdoors and moved often, and their only cooking vessel was the hanging pot (吊锅), so stewing was the natural method; Xinhua gives this as the origin of the so-called "eight great stews" (八大炖). A 2025 People's Daily essay adds that the later "Chuang Guandong" (闯关东) migration, when settlers came in large numbers from China south of the Great Wall passes, brought cooking of every kind to the Northeast, and describes the stews as free of fixed rules.
Ingredients
The Xinhua article lists familiar combinations: chicken with mushrooms, spare ribs with green beans, potatoes with beef, and potatoes simmered with cabbage, thin slices of streaky pork, glass noodles and daylily buds. The People's Daily essay says every stew has one central ingredient, usually meat, with the rest in support. Its example of the autumn stew called "bumper harvest" (大丰收) puts pork ribs in the lead with fresh green beans, eggplant, potatoes, wogua squash (倭瓜) and corn. Pork stewed with glass noodles comes with tofu and cabbage; in winter, frozen tofu soaks up more of the broth. The essay stresses that the iron pot must be big enough to hold many meats and vegetables at once.
Stews on the Daqing table
Northeast Net's report on Daqing's 2021 winter foods names several stews. Chicken with mushrooms is usually dried mushrooms, chicken and glass noodles stewed together, with hazel mushrooms (榛蘑) bringing out the chicken's flavour. The pig-killing dish (杀猪菜) simmers naturally fermented suancai (酸菜), the Northeast's sour pickled cabbage, with large slices of skin-on pork belly and fresh blood sausage in one pot. Iron-pot stew (铁锅炖) is cooked over a wood-fired stove, most famously with goose, free-range chicken or mixed fish. For catfish stewed with eggplant, Northeast Net points visitors to the city's river-fish restaurants.
