Grilled Skewers (烤串) means grilled skewers: small pieces of meat, offal or vegetable threaded on sticks and cooked over charcoal, eaten straight off the stick.

How it is made

The pieces are cut small, threaded on bamboo or metal skewers with a little space between them, and cooked over a narrow, high heat so that fat renders and the surface browns before the inside dries. Seasoning goes on in two stages — salt and sometimes a dry rub before cooking, cumin, chilli and sesame after — because spices burn quickly over an open fire. Turn skewers during cooking; touch alone does not establish that the food is safely cooked.

What it tastes like

The character of a skewer comes from fat and smoke, not from sauce. Lamb with a piece of fat between the lean cubes bastes itself; beef stays leaner and firmer; chicken wing and offal pieces take on a chewier texture. Cumin and chilli dominate the northern version, salt alone the simplest one, and the outside of a good skewer is drier and more savoury than the middle, which is why they are eaten two or three to a mouthful straight from the stick.

Where it belongs

Skewer grills are a summer-night street food across northeastern China as much as anywhere else, and 烤串 is one of the specialties associated with Heilongjiang. The province does have a documented grilled-meat culture — the Heilongjiang provincial government's report on Qiqihar includes 烤肉 among the city's industry chains — but that material describes the Qiqihar plate grill of marinated beef, not skewers, and nothing read for this entry documents a distinct Heilongjiang skewer style. Treat the provincial association as nominal rather than as a specific local tradition.

Ingredients and dietary questions

Expect the meat to be seasoned with salt, cumin, chilli, sesame and sometimes a light marinade of oil and onion; peanut may appear in dry rubs and sauce. Skewer stands usually grill several kinds of meat on the same rack, so cross-contact with pork, seafood and offal is normal. Bamboo skewers are single-use; metal ones are reused. If you are avoiding chilli or cumin, ask before the skewers go on the fire, because the spices are shaken on during cooking.

Ordering it

Order by the skewer rather than by the plate: 十串 means ten skewers and 羊肉串 is the lamb version. Useful phrases: 牛肉串 for beef, 鸡翅 for wings, 板筋 for the chewy connective-tissue skewer, 不要辣 for no chilli and 少放盐 to ask for less salt. Grilled vegetables and 烤馒头片 are ordered the same way, and 打包 will get the rest wrapped to take away.

How it is eaten

Skewers are eaten by sliding the meat off with the teeth or pushing it off with chopsticks, and the sticks go into a holder on the table, not back into the shared dish. The meal is paced: order a first round of ten, judge the seasoning, then order more. Because the food is hottest and crispest straight off the fire, the usual rhythm is a few skewers at a time with something cold to drink.

Qiqihar barbecue 齐齐哈尔烤肉 →

Qiqihar barbecue (齐齐哈尔烤肉) is marinated beef cooked on a hot plate at the table, with dipping powder, and it is promoted by the city as an industry chain. Skewers are the street version of the same instinct: smaller pieces, an open fire instead of a plate, seasoning shaken on during cooking, and eaten standing or walking. The two share cumin and charcoal smoke; they differ in who cooks and what the dipping ritual is.

Questions before you order

What is the difference between 烤串 and 烤肉?

Skewers are small pieces on sticks cooked over an open fire, while 烤肉 in Heilongjiang usually means marinated slices cooked by the diner on a table grill or hot plate.

Is there one standard Heilongjiang skewer recipe?

No standard was found in the material read; the seasoning is the cook's, and this entry therefore states only the general northern method.
