Linkou Goose (林口大鹅) is goose raised in Linkou (林口) county, Mudanjiang (牡丹江), Heilongjiang, where the county government has built goose farming into a local industry.

Where it comes from

Linkou lies in the south-east of Heilongjiang and the north-east of Mudanjiang city. Its name, literally forest mouth, comes from its position at the forest gap between the Zhangguangcai (张广才岭) and Laoye (老爷岭) ranges.

To build up goose farming, the county has paid interest on farmers' loans, matched their insurance and subsidised orders, linking its farms to the Zhonglin (中林) poultry slaughtering and processing project so that farmers have a buyer and the plant has a steady supply of birds.

How it is eaten

Linkou county's own figures for 2024, carried on the Mudanjiang city government portal, show where the geese go. Live birds were sold mainly to Harbin, Mudanjiang and Jiamusi (佳木斯) within the province, and about 200,000 were processed into dressed carcasses (白条鹅) sold mainly to Zhejiang and Jiangsu. Inside Linkou, eighteen food shops that prepare goose used about 700,000 local meat geese a year, and around 600,000 more were slaughtered and sold for the table by rural households themselves.
