Nehe Potato Starch Noodles (讷河马铃薯粉) are potato noodles from Nehe (讷河), a city in Qiqihar (齐齐哈尔), Heilongjiang, that carries the title Potato Home of China (中国马铃薯之乡).

Where it comes from

Nehe takes its name from the Nemor River (讷谟尔河), which runs across the city, and it lies in one of the world's three black-soil belts. The Heilongjiang Daily reported in 2016 that Nehe's potato fields made up a sixth of the province's potato area, the largest share of any place in Heilongjiang.

The city has registered Nehe Potato Products (讷河马铃薯制品) and Nehe Potato (讷河马铃薯) as geographical indications. Its potato products fall into five lines, nearly a hundred items in all: seed potatoes, fresh potatoes, starch, starch noodles (粉条), and crystal vermicelli and sheets (水晶粉丝粉皮).

How it is made

Lumin (鲁民) is a potato-growing specialist village in Nehe where people have made starch noodles for a long time. Its noodle co-operative, set up in 2009 and named a national model farmers' co-operative in 2011, registered the Lumin brand and moved from the old bundled noodles to small refined packs. It describes itself as able to make 5,700 tonnes of hand-made potato noodles a year.
