Foping Green Leaf Tofu (佛坪神仙豆腐) is a seasonal food made from tree leaves in the mountains of Foping (佛坪). The soft, green tofu-like food is associated with summer hospitality and with a household craft passed between generations.
Ingredients
Foping County Government names two local plant materials: shenxianye (神仙叶), meaning immortal leaves, and a tree called jigutou (鸡骨头). Both grow on local slopes and in woodland. The craft uses traditional wooden utensils.
Foping County Government describes the finished food as soft and refreshing.
Where it comes from
Foping County Government says the starting date of the craft is unrecorded. A local legend credits Shennong (神农) with discovering leaves that could make a tofu-like food and teaching the method to local people.
Foping County Government also recounts the use of these leaves during war and famine. It traces the seasoned snack to the Qing period and describes it as food for summer guests in mountain households. Its recorded line of practitioners includes Fan Guilan (范桂兰), her pupil Qin Cheng’e (覃成娥), and Gao Ying (高英), who began learning from Qin in 2000.
