Liquan Griddled Noodles (礼泉烙面) is a Liquan (礼泉) speciality served by pouring seasoned meat-and-bone broth over griddled noodle strips. Garlic shoots or chives and diamond-shaped pieces of thin omelette finish the bowl.
Ingredients
The broth combines more than ten seasonings, including pepper, star anise, Sichuan pepper, cassia, ginger, salt, soy sauce, chilli and aged vinegar. Chilli prepared with hot oil also goes into the soup. The garlic shoots or chives are cut into fine strips or short pieces before being added with the egg.
Where it comes from
Liquan’s local records office describes the dish as a winter favourite and recounts a legend linking it to labourers building Emperor Taizong’s Zhaoling Mausoleum (昭陵). In the story, a resourceful woman devised a way to feed large numbers of noodle-loving workers.
She mixed flour into a sticky batter, spread it into thin cakes in a pan, then cooled and cut them into strips. Hot soup was poured over the strips for eating. The story calls this clever-woman noodles before the more descriptive griddled-noodle name took hold.
