Qian County Tofu Pudding (乾县豆腐脑) is a white, soft bean curd served with salt, vinegar, garlic juice and chilli in Qian County (乾县). Vendors scoop it from earthenware jars with a small copper spatula, then season each bowl.

How it is eaten

Morning diners often hold steamed bread in one hand and a small porcelain bowl in the other. Red chilli oil sits over the pale curd, which is eaten with a small spoon. This is also an evening food: people sit on stools beside the jars, watch the vendor scoop and season the curd, and linger over their bowls.

Where it comes from

In an essay published by Qian County government, Fu Jianhua (傅建华) recalls a seller surnamed Shi carrying an earthenware curd jar and a seasoning box on opposite ends of a shoulder pole during the people’s commune period.

The same essay remembers Liu Jiazi (刘甲子) of Xintai Lane (新泰巷) and Lei Tianbao (雷天保) of Zhonglou Lane (钟楼巷) as well-known makers in the 1980s. Their stalls drew queues at the South Street market, leaving a strong impression on older local diners.
