Qingjian Buckwheat Wraps (清涧煎饼) are made from buckwheat grits that are soaked and squeezed through cloth to produce the batter. The paper-thin pancakes are filled and dipped in ginger-garlic liquid or cooked tomato sauce.
How it is made
Buckwheat is coarsely milled to remove its husks. The grits are thoroughly soaked, excess water is drained away, and the wet grain is placed in a bag made from steaming cloth. Repeated rubbing and squeezing release the liquid batter.
After dilution with water, the batter is spread on a special pancake griddle into rounds about twenty centimetres across. The wrappers are as thin as paper.
Ingredients
One filling combines mung-bean or black-bean sprouts with glass noodles, shredded meat and fried tofu strips, mixed as a cold filling. Another uses chopped braised pig’s head, pork knuckle or other braised meat with green pepper and chopped garlic.
How it is eaten
The filling is rolled inside the pancake, then the wrap is dipped into its accompanying sauce. A Yulin TV (榆林电视台) feature republished by Qingjian (清涧) County Government describes the pancakes as part of everyday local life, with pancake shops throughout the county.
