Anyue Jar-Preserved Pork (安岳坛子肉) is a farmhouse pork speciality of Anyue (安岳). Fried meat is packed into an earthenware jar with preserved vegetables, giving it the combined fragrance of pork and salted greens.
How it is made
Cover News (封面新闻) documented home producer Ms Kang (康大姐) in Wofo (卧佛镇). She selects pork belly with balanced lean and fat, cuts equal pieces, singes and scrapes the skin, then soaks the meat for a day in water mixed with salt, sugar and baijiu. After drying it, she fries it in local rapeseed oil, turning it repeatedly to avoid burning.
The cooled pork is coated on every side with a powder of roasted corn, rice, soybeans and dried chilli seeds. Meat and preserved vegetables are packed in alternating layers and compressed before the jar is sealed. Her usual vegetable is shredded radish; Cover News describes fermentation within the sealed jar.
