Guanghan Golden Thread Noodles (广汉金丝面) are very fine hand-rolled noodles from Guanghan (广汉), a city in Deyang (德阳), Sichuan. China News Service counts Deyang's jinsi noodle craft, which it calls quandan zuogang dadao jinsi mian (全蛋坐杠大刀金丝面, literally 'whole-egg, sitting-pole, big-knife golden-thread noodles'), as one of the prefecture's two fine-noodle techniques, alongside Zhongjiang handmade hanging noodles (中江手工挂面).

How it is made

No water goes into the dough at all: the flour is bound entirely with egg. According to China News Service, the dough is pressed again and again until the sheet is about 0.5 millimetres thick, thin enough for print to be read through it. The noodles cut from it are fine enough to pass through the eye of a needle and will catch fire if held to a flame, which the agency calls the peak of Chinese pastry-and-dough (白案, bai'an) craft.

Where it comes from

Guanghan treats the noodles as part of its intangible cultural heritage and brings them out at its heritage fairs on Luochengmen Square (雒城门广场). People's Daily's Sichuan edition lists jinsi noodles among the crafts shown by heritage bearers at the 2024 Guanghan heritage week, next to Guanghan rabbit bound in string (缠丝兔) and Lianshan twice-cooked pork (连山回锅肉). At the 2026 new-year heritage week, Sichuan Daily reports, a cook rolled the noodles in front of visitors, and in June 2025 a Deyang Daily report carried on the Guanghan city government's website described the noodles being made on site at a joint heritage day with Kaili (凯里) in Guizhou.
