Shuanghe Chilled Rice Cake (双河凉糕) is a soft rice cake from Shuanghe (双河), in Changning County (长宁县), Yibin (宜宾). Its traditional preparation uses water from Putao Well (葡萄井), whose name means Grape Well.

How it is made

The main ingredient is Guichao rice (桂朝米), a local rice variety with large, full grains and a high starch content. Traditional makers wash and soak it in the well water, grind it by hand with a stone mill into rice slurry, and cook it. The cake is then soaked in flowing well water to cool.

Flavour and texture

The resulting cake is white and translucent-looking, fine-textured, tender and smooth. Local shops serve it in bowls or on plates, with brown-sugar, fruit and spicy flavours among the options. Newer variations include osmanthus and taro.

Where it comes from

The making technique entered Sichuan (四川)'s provincial intangible cultural heritage list in 2018. The town's rice-cake tradition has used Putao Well water since the Qing period.
