Yingshan Cold Noodles (营山凉面) are a traditional noodle snack from Yingshan (营山) in Nanchong (南充). Fine, tender noodles are served cool with aromatic, hot seasonings, especially the county's red chilli oil.
The red oil
The chilli oil is made with fresh oil pressed from locally grown rapeseed. Several chilli varieties, including Erjingtiao (二荆条), are cooked in it, followed by aromatic herbs, ginger and garlic. Its characteristic combination is a red colour, fragrance and lingering chilli heat.
A local noodle custom
Diners can have a mixture of plain oil and red oil, while some local customers choose an all-red-oil bowl. Yingshan also has a first-day-of-the-new-year custom of eating these noodles to express a wish for longevity; they are consequently called longevity noodles.
