Hotan Roasted Eggs (和田烤蛋) are eggs roasted at the night markets of Hotan (和田) in southern Xinjiang. People's Daily calls them a standard order at the Hotan night market, and a Hotan resident it quotes names them, with roast lamb intestine and yoghurt zongzi (酸奶粽子), as Hotan specialities to order alongside lamb kebabs.
Ingredients
The version People's Daily singles out is called 'three eggs and one star' (三蛋一星). A goose egg has its white taken out and is filled with the 'three eggs': a free-range chicken egg, a pheasant egg and a pigeon egg. The 'star' is the added flavouring, such as saffron and honey.
Ostrich eggs are roasted too: CCTV's food programme Weidao (味道) presented roasted ostrich egg in 2021 as a highlight of the Hotan night market.
How it is eaten
Hotan Roasted Eggs belong to the night market. A local saying, quoted by People's Daily, holds that you have not really been to Hotan until you have been to the night market.
