Roasted Eggs (烤蛋) are a night-market snack of eggs cooked at a street stall, and in Kashgar (喀什) they are sold in the Old City (喀什古城). The Xinjiang Department of Culture and Tourism names roasted eggs among Kashgar's foods, next to whole roast lamb, lamb skewers and baked buns, and in 2025 China News Service met a visitor at the Old City night market holding one she had just bought.
How it is made
The eggs come in several sizes. China Radio International, describing the roasting stalls at the night market in Hotan (和田), one of Xinjiang's well-known night markets, lists pigeon eggs, chicken eggs, goose eggs and even ostrich eggs, with seasoning added after roasting to each buyer's taste.
With ostrich eggs, the seasoning can go inside the shell. In January 2024 a Xinjiang Daily reporter in Kashgar Old City watched a visitor live-streaming from a roasted-egg stall; the seasonings put into the ostrich egg were honghua (红花, safflower) and honey, and the egg had to be stirred every five minutes. Once it was cooked, the visitor invited local visitors standing nearby to taste it.
