How it is made
The young green-tea leaves are processed with heat to halt oxidation, then dried into fine, slender shapes. For drinking, the leaves are infused in hot water without milk or sweetener.
Flavour & texture
The liquor is fresh and vegetal with a gentle nuttiness and a possible light astringent finish. Leaf quality, water temperature and steeping time change the balance.

Kaifeng sweet-potato paste 炒红薯泥 →
Cooked sweet potato is mashed and stirred over heat with sugar and fat until smooth and cohesive. Continued stirring concentrates the puree and keeps it from sticking. The result is rich, silky and distinctly sweet, with a soft roasted-root aroma rather than the texture of a loose soup.
Huimian 烩面 →
Wheat dough is stretched into broad noodles and cooked in broth, often based on lamb, with meat and other additions. Different Henan shops use their own stocks, toppings and noodle shapes. The broad noodles are supple and chewy, carrying a rich broth well. Meat, greens or tofu products introduce contrasting textures.
