Fresh and dried rice noodles
Yuechi rice noodles (岳池米粉) come in fresh and dried forms. Fresh noodles are made from fermented rice, while the dried version undergoes ageing and drying to remove much of its moisture. The strands have a fine, soft texture. For a bowl of the dried variety, the noodles are soaked until softened, blanched in boiling water and drained.
Broth and newer varieties
The broth is prepared from pork bones and spices. Beef or pork intestine can top the noodles, with chilli oil added to the bowl. Lianqiao rice noodles (莲桥米粉), a local brand, has also developed versions containing lotus seeds, tartary buckwheat, purple sweet potato and konjac alongside ordinary rice noodles.
