Setting and landscape
The city government describes Fuzhou as a typical estuarine basin, ringed by Gushan (鼓山), Qishan (旗山), Wuhu Mountain (五虎山) and Lianhua Peak (莲花峰), mostly 600 to 1,000 m high. Mountains and hills cover nearly 73 percent of the municipality, and the Min River cuts east through the city to the sea. Offshore lie 545 islands, among them Haitan Island (海坛岛), 274.33 km² in area.
History
In 202 BC Wuzhu (无诸) was made King of Minyue with his capital at Yecheng (冶城), in today's Fuzhou. The name Fuzhou dates from 725 under the Tang, and in 909 Wang Shenzhi (王审知) made the city the capital of his Min kingdom; walls extended during the Five Dynasties enclosed the Wu (乌山), Yu (于山) and Ping (屏山) hills, hence the old name Sanshan, 'Three Hills'. Fuzhou opened as one of the five treaty ports in 1844. In 1866 the Qing founded the Fuzhou Navy Yard (福州船政局) at Mawei (马尾), and in 1884, during the Sino-French War, the Fujian fleet was almost wiped out in the naval battle at Mawei.
What to see
Sanfang Qixiang (三坊七巷), the 'three lanes and seven alleys' of Gulou District (鼓楼区), keeps the Tang and Song ward plan along Nanhou Street (南后街) and the former homes of Lin Zexu (林则徐), Yan Fu (严复) and Bing Xin (冰心), among many others. It is a national key protected site, a AAAAA scenic area and on China's World Heritage tentative list. Gushan in Jin'an District (晋安区), north of the Min River and rising to 919 m, holds Yongquan Temple (涌泉寺), founded in 783, and more than 300 cliff inscriptions, including calligraphy by Cai Xiang (蔡襄) and Zhu Xi (朱熹), protected as a national key site.
Food and local products
Fuzhou cooking uses shrimp oil and rice-wine lees and gives soups special weight. Fotiaoqiang (佛跳墙), 'Buddha jumps over the wall', took shape in the Qing and is linked with the Juchunyuan (聚春园) restaurant: more than 30 ingredients are packed into a Shaoxing wine jar and simmered over a low fire, and its making is national intangible heritage. Well-known snacks include fish balls (福州鱼丸), rouyan (肉燕) dumplings and dingbian hu (鼎边糊). The scenting of jasmine tea, green tea infused with fresh jasmine, and bodiless lacquerware (脱胎漆器) are also on the national intangible heritage list.
Getting oriented
The government sits in Gulou District. Fuzhou Station and Fuzhou South Station are the main rail stations, and Fuzhou Changle International Airport lies 45 km from the urban area on the coast of Changle District (长乐区).
